I have been loving making this super easy 4 ingredient bruschetta this summer. It’s so easy to make, and such a crowd pleaser. Sometimes I will add it to slices of baguette like traditional bruschetta, but a lot of time I make a big batch of this and eat it as a side salad of sorts. I love tomatoes and the pairing of garlic and basil make this incredibly light and refreshing.
Recipe:
• 2 pints of cherry, mini heirloom, or grape tomatoes - halved or quartered
• 3-4 cloves of garlic - thinly sliced
• 10-12 large basil leaves thinly sliced into ribbons
• 1/3 cup of olive oil
• sea salt to taste
Instructions:
Slice all of your tomatoes, basil, and garlic. Add the garlic to a small sauce pan with 1/3 cup of olive oil and heat on the lowest setting of a burner for about 5-10 minutes or until you start to smell the garlic. This will take a little bit of the bite out of the garlic and infuse the oil. Let the oil cool for about 10-15 minutes and then toss with the tomatoes and basil. Serve as a side dish or on pieces of baguette for a traditional bruschetta.
