Zuppa Toscana Recipe - Delicious and quick!

ZUPPA TOSCANA

Sautée in pot:

-2 tbsp evoo

-I small onion, finely diced

-optional: 1 cup diced sausage of choice

-3 cloves garlic, minced

-I tsp Italian seasoning

-1/2-1 tsp salt (per taste)

-1/4 tsp black pepper

-I pinch red pepper flakes

-3 cupsbroth

-4 medium potatoes, cubed

Bring all to a simmer and cook for 15 minutes, until potatoes are tender

-2 cups kale, chopped 314 cup whole cream

-1/4 parmesan cheese, shredded

Heat another 5 minutes
