okay i am so obsessed with this carrot cake loaf, i could eat it all in one sitting😩
recipe—
dry ingredients
1 1/4 cup all purpose flour
1/4 tsp ginger, nutmeg, & clove
1 tsp cinnamon
1/4 cup sugar
pinch salt
1/2 tsp baking soda
1 tsp baking powder
1/3 cup packed brown sugar
wet ingredients:
3/4 cup oil (i used avocado)
1 tsp vanilla extract
2 flax eggs or egg replacers
1/3 cup unsweetened applesauce
1 tbsp plant milk
1 tbsp maple syrup
3/4 cup chopped pecans
1 1/4 cup shredded carrots
directions: preheat oven to 350°F & line a loaf pan with oil and parchment paper.
combine all dry ingredients together in a bowl. combine all wet ingredients together in a separate bowl. pour wet into dry and mix until just combined.
fold in pecans & carrots. bake for 45-50 minutes or until a knife/toothpick inserted in the middle comes out clean!
cream cheese frosting:
3.5 oz vegan cream cheese slightly softened mixed with 4 tbsp vegan butter, dash of vanilla extract, and 1 1/4 cup powdered sugar!
