Fall #cozyrecipes! Great for weeknights 🍁

🍁This is quick and satisfying meal and is only 3 main ingredients plus spices!

Sausage and sweet potato sheet pan bake

Serves 4

🍁Ingredients:

1 andouille sausage, sliced

2 sweet potatoes, peeled and cubed

2 cups brussel sprouts, sliced in half

4 garlic cloves, minced

1/4 cup olive oil

1 tbsp salt

1/2 tbsp chili powder

1/2 tablespoon paprika

1/2 tsp cumin

1/2 tsp garlic powder

1/2 tsp black pepper

🍁Directions:

1. Preheat oven to 375F. Cover sheet pan with parchment paper and set aside.

2. Combine all the spices in a small bowl.

3. Add all the vegetables into a large mixing bowl. Drizzle olive oil and spices over and stir to combine.

4. Add sliced sausage and combine well, then dump onto sheet pan.

5. Bake at 375F for 40 minutes or until sweet potato is tender enough for a fork to pierce.
