Here’s what you’ll need!
-Puff pastry. I made my own but you can certainly use store bought! All you need is a cup and a quarter cold salted butter, 1/2 cold water, 1/4 salt and 2 cups flour. Combine in food processor, roll into a ball, roll it out and chill for one hour.
-Jam. Again store bought is fine but so simple to make your own! I used two cups frozen berries, lemon juice and sugar. Combine on the stove and let cook for 30-45 minutes, mashing and stirring as it heats.
-lemon zest glaze! Super simple, wisk together Greek yogurt, cream cheese, lemon zest & juice, & honey. Top once the pop tarts come out.
Cut your puff pastry into squares, put a spoonful of jam filling in the middle, then use an egg wash to attach the top squares. Press a fork along the edges to seal and poke holes in tops. Bake at 400 degrees for 20 minutes or until golden brown. Top with glaze and serve!
