Soft, chewy, and with a cookie dough-like texture 😍Perfect for a post-workout treat or an afternoon snack!
Ingredients:
~ Wet
1/2 cup pumpkin spice nut butter @eatnuttzo
2-3 tbsp sugar-free maple syrup
2 tbsp pumpkin puree
1 tbsp melted coconut oil
1 tsp vanilla extract
~ Dry
1/2 cup vanilla @equipfoods protein powder (code: tinaeats)
4-6 tbsp almond flour
2 tsp pumpkin pie spice
1/8 tsp sea salt
1/4 cup sugar-free @lilys_sweets dark chocolate chips
Instructions:
1. Line a baking pan with parchment paper.
2. Mix the wet ingredients until smooth, then stir in the dry ingredients until a thick, cookie dough-like texture forms. Adjust with more almond flour or syrup if needed.
3. Fold in the chocolate chips, press the mixture firmly into the pan, and freeze for 30 minutes.
4. Cut into bars and store in the fridge for the week.
Optional: Sprinkle some flaky sea salt on top.
