The only bruschetta recipe you need! I make it all the time, whether I’m bringing it to a party or simply having it as a simple but delicious appetizer for my family.
Tomato Bruschetta
1 container cherry tomatoes, chopped
1/3 cup basil leaves, chopped
5 garlic cloves, minced and divided
1 tbsp balsamic vinegar
2 tbsp EVOO
1/2 tsp salt
1/4 tsp pepper
Toast
1 baguette
3 tbsp EVOO
1/3 cup parmesan
•Preheat oven to 400
•Add 1 tsp of minced garlic into a small bowl with 3 tbsp of olive oil. Set aside
•In another bowl, combine tomatoes, basil, remainder of minced garlic, salt, pepper, 2 tbsp EVOO, 1 tbsp balsamic vinegar. Mix and set aside
•Cut baguette into 1/2” thick slices and place on a baking sheet
•Brush garlic infused oil on both sides of each slice of bread
• Sprinkle Parmesan over the bread
•Bake 5 minutes and then broil for 1-2 minutes until the edges are golden brown
•Remove from the oven and divide the tomato mixture onto the bread
•Drizzle with balsamic glaze(optional), plate and enjoy!
