As part of my challenge to eat toasts for a week, I made this veggie-only healthy spinach mushroom scramble toast!
Ingredients:
100g spinach
100g shitake mushrooms, sliced
3 cloves garlic, sliced
3 eggs, beaten
Salt & pepper
Garlic-infused olive oil (optional)
Recipe:
1. Saute spinach and mushrooms with garlic, seasoning with salt & pepper.
2. Push ingredients to one side of pan and scramble eggs in the other side of same pan. Once eggs are almost cooked, combine with the spinach & mushrooms.
3. Toast bread and assemble. Top with garlic-infused olive oil and freshly cracked black pepper.
It filled me up good & I didnβt miss having meat at all! Great for those meatless Mondays & eating clean! πͺπ»π₯¬
