Ingredients:
* 6 cups fresh kale, stems removed and chopped
* 1/2 cup chopped walnuts
* 1/2 cup dried cranberries
* 4 oz goat cheese, crumbled
* 1 apple, diced
* 1 sweet potato, diced
* Salt and pepper to taste
For the Honey-Dijon Dressing:
* 3 tablespoons honey
* 3 tablespoons olive oil
* 2 tablespoons apple cider vinegar
* 1 tablespoon Dijon mustard
* 1 clove garlic, minced
* Salt and pepper to taste
Instructions:
Preheat your oven to 400°F (200°C). Toss the diced sweet potato with a drizzle of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes or until they are tender and slightly caramelized. Allow them to cool.
In a large salad bowl, combine the chopped kale, diced apple, roasted sweet potato, chopped walnuts, dried cranberries, and crumbled goat cheese. Season with a pinch of salt and pepper.
In a separate small bowl, whisk together the honey, olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
Drizzle the honey-dijon dressing over the salad and toss everything together until the salad is evenly coated with the dressing.
Serve immediately as a satisfying and nutritious meal.
