Healthy Fall Salad

Now that we are mid-way into September, bring on ALL the #fall recipes... like this Healthy Fall Salad! 🍂🍎🥬🍁

dEATS:

•2-3 cups chopped kale

• 1/2 cup cooked quinoa (I cooked mine in bone broth for more protein)

• 1/2 cup cubed butternut squash (save time and buy the steam bag)

• 1 honey crisp apple (sliced up/diced)

• handful of chopped pecans and dried cranberries

• feta cheese crumbles

Apple Cider Vinaigrette

• 3 tbsp EVOO

• 2 tbsp ACV

• 1 tbsp maple syrup

• 1.5 tsp Dijon

• 1 clove minced garlic
