🍝Today were making a creamy butternut squash rigatoni, not only is this recipe budget friendly, it also contains 6 hidden veggies, comes together in under an hour and makes a great lunch throughout the week, serve it with bread, and you’ll never buy frozen butternut squash pasta again.

📝recipe:

1 & 1/2 cup of butternut squash cubed

1 cup of acorn squash cubed

1 tbsp of oregano 🌿

1 tsp of paprika

1 tbsp of EVOO

1 tbsp of salt 🧂

3 garlic cloves 🧄

1/4 cup of orange bell pepper

1/4 cup of onion 🧅

1/4 cup of yellow bell pepper

1 can of coconut milk 🥛

🗒️directions:

Preheat the oven to 410F. Line baking sheet with parchment paper and place veggies on top. Add desired spices and place in the oven for 25 minutes. While baking, use the mandolin or chop up veggies and transfer to a skillet under low-medium heat. Lightly sauté until fragrant and add the roasted butternut and acorn squash. Use an immersion or regular blender to make uniform. Add your favorite pasta and enjoy with bread on the side!
