Fall Inspired Pasta Dish 🎃

Fall is my absolute favorite time of year. I swear I am way more inspired to cook up yummy dishes when the air starts becoming brisk and the leaves start to change colors. This dish was so easy to make and had very few ingredients (which being a single mom makes my life a whole lot easier!)

Recipe 🧑‍🍳🧑‍🍳

1/2 bag of pasta (I used the fun little pumpkin shaped pasta from Trader Joe’s)

1 garlic clove minced

2 full containers of cherry tomatoes (the more the better IMO and I enjoy the colorful ones!)

1 8oz package of feta cheese

Random handful of spinach (it cooks down so put as much as you like to satisfy)

Pour tomatoes into an 8X10 baking dish. Drizzle olive oil on top and add salt and pepper to your liking.

Fit the feta cheese in the center.

Bake in the oven at 400 degrees for 30 mins.

Cook pasta.

Once the 30 mins are over take the dish out of the oven and top with minced garlic, put the dish back in and broil on high until the feta and the tomatoes start browning on top.

Once it’s browned to your liking take the dish out of the oven and toss in the spinach, stir until the spinach is cooked down and add the pasta.

That’s it, so easy! Now you have a colorful fall dish 🍂🍁
