Penne Alla Vodka Under 25 Minutes! 🍝

As a toddler mom, I’m always making meals that are quick, affordable, and easy to make. My go to dish that is only under 25 minutes to make is Penne Alla Vodka, minus the vodka. A simple and filling meal that seems to always impress friends and family when I am entertaining. With pretty minimal ingredients, this recipe is beginner friendly and will most likely become a staple in your kitchen.

I N G R E D I E N T S

- 2 cups penne pasta

- 1 cup heavy cream

- 1/4 cup pasta water

- 1 shallot

- 4 tbsp of tomato paste

- 1 cup of grated Parmesan cheese

- salt + pepper to taste

- optional : red pepper flakes

D I R E C T I O N S

- Start off by cooking your penne pasta. I added some salt to my water to flavor the pasta a little bit.

- While your pasta is boiling, mince your shallot, and grate your Parmesan.

- On medium heat, add olive oil to your pan. Once the oil heats up add your shallots and let them get golden brown. Add 4 tbsp of tomato paste and stir it all together.

- Add your cup of heavy cream and Parmesan into the pan. Stir it well to combine it all.

- Add strained pasta and your 1/4 cup of pasta water. Salt and pepper to taste. Mix everything together and let it simmer to thicken up.

- This is optional but I love adding some red pepper flakes for some spice.
