This Northern Thai dip is one of my absolute favorite relishes. It’s usually made with pork, but I made a healthier version using chicken breast instead. It’s like a Thai-style bolognese sauce with minced chicken breast, ripe tomatoes, and the heat of spicy chilies—so delicious!
