How to make Shanghai Spicy Sauce Noodles?

Ingredients:

• 200g fresh or dried thin noodles

• 100g minced pork or beef

• 2 tablespoons soy sauce

• 1 tablespoon dark soy sauce

• 1 tablespoon chili oil (adjust to your spice tolerance)

• 1 teaspoon sugar

• 2 cloves garlic, minced

• 1 tablespoon ginger, minced

• 1 tablespoon Shaoxing wine (optional)

• 1 tablespoon sesame oil

• 1 tablespoon vegetable oil

• 2 tablespoons water or chicken broth

• Chopped scallions (for garnish)

• Sesame seeds (for garnish)

• Sliced cucumber (optional, for serving)

Instructions:

1. Prepare the Noodles:

• Cook the noodles according to package instructions. Drain and set aside. You can lightly toss them in a bit of sesame oil to prevent sticking.

2. Cook the Meat:

• Heat vegetable oil in a pan over medium heat. Add minced garlic and ginger, sauté until fragrant.

• Add the minced pork or beef and stir-fry until browned and cooked through.

• Add Shaoxing wine (if using), soy sauce, dark soy sauce, sugar, and water or broth. Stir to combine and let it simmer for 2-3 minutes until the sauce thickens slightly.

3. Add Spice:

• Stir in the chili oil and mix well, ensuring the meat is well coated with the spicy sauce.

4. Combine:

• Toss the cooked noodles with the spicy sauce, ensuring the noodles are evenly coated.

5. Serve:

• Garnish with chopped scallions, sesame seeds, and serve with cucumber slices on the side.
