How to make Steamed Pork Ribs with Fermented Black Beans?

Ingredients:

• 500g pork ribs, cut into small pieces

• 2 tablespoons fermented black beans (豆豉), rinsed

• 3 cloves garlic, minced

• 1 small red chili, sliced (optional)

• 1 tablespoon light soy sauce

• 1 tablespoon Shaoxing wine

• 1 teaspoon sugar

• 1 teaspoon cornstarch

• 1 tablespoon vegetable oil

• 1 teaspoon sesame oil

• 1 spring onion, sliced for garnish

Instructions:

1. Prepare the Pork Ribs: Rinse the pork ribs under cold water and pat them dry with paper towels. Place them in a mixing bowl.

2. Marinate the Ribs: Add the light soy sauce, Shaoxing wine, sugar, cornstarch, and vegetable oil to the ribs. Mix well, ensuring the ribs are fully coated. Let the ribs marinate for at least 30 minutes, or preferably 1 hour.

3. Prepare the Fermented Black Beans: Rinse the fermented black beans under cold water and drain. In a small bowl, mash the beans slightly with the back of a spoon, then mix with the minced garlic and sesame oil.

4. Assemble for Steaming: Spread the marinated pork ribs evenly on a heatproof plate. Spoon the fermented black beans and garlic mixture over the ribs. Top with sliced chili if desired.

5. Steam the Ribs: Set up a steamer and bring water to a boil. Place the plate of pork ribs in the steamer, cover, and steam over medium-high heat for about 25-30 minutes, or until the ribs are tender and cooked through.

6. Garnish and Serve: Once the ribs are done, remove from the steamer. Garnish with chopped spring onions and serve hot.
