This is easy- take any leftover chicken you cooked and boil it in a pot of water for 1 hour. Let simmer on medium/low heat for 2-3hours. I added some Italian seasonings, garlic powder, salt, and lots of black pepper as well as 3 bay leaves. You can add as much or as little seasonings you’d like.
Once my broth has cooked for 3-4 hours I will turn off the heat and let it cool for 1 hour. Place a large bowl into your sink with a strainer on top. Pour the broth into a strainer, letting the liquid pour into the bowl and the strainer catch the chicken and other large pieces.
To remove smaller pieces of fat, skin, etc. feel free to do this again with a cheese cloth rather than strainer.
