How easy is it to make chicken rice? Actually, it requires quite a bit of effort! ๐
But I chanced upon this very easy, shortcut version using a rice cooker, and it has been our go-to whenever weโre craving some homemade chicken rice. Even better, since the cooking is done with the rice cooker, there are fewer dishes to wash too!
๐ INGREDIENTS (Makes 2 to 3 servings)
๐ Chicken marinade:
400g boneless chicken thighs
3 slices of ginger, thinly sliced
1 stalk of spring onion (use only the stem part)
1 tsp salt
1 tsp sesame oil
๐ Chicken rice:
1 cup jasmine rice rinsed and drained
1 cup chicken stock (about 3/4 of the amount that you usually use)
4 cloves garlic; lightly smashed
3 slices ginger
2 pandan leaves; tied in a knot
1 stalk of spring onion; tied in a knot
2 tsp cooking oil
salt (to taste)
โฌ๏ธ DIRECTIONS
1. Marinate chicken for at least 20 mins before cooking.
2. Switch on rice cooker to the โFry/Cookโ function to heat it up. Add in cooking oil, garlic, ginger, pandan leaves, spring onion, and saute until fragrant.
3. Add rice and chicken stock. Add chicken pieces on top and start the rice cooker. When the rice and chicken are cooked, season to taste with salt, if needed.
4. Remove the garlic, ginger, pandan leaves, and spring onion from the rice, and serve!
