Authentic Enchilada Sauce

Ingredients:

• 1/4 white onion

• 1 large garlic clove

• 1 ancho chili

• 8 guajillo chilies

• 2 cups chicken broth

• 2 tablespoons vegetable oil

• Salt, to taste

Instructions:

1. Prep the chilies:

Remove the stems and seeds from the ancho and guajillo chilies. Rinse them under cold water to remove any dust or debris.

2. Simmer the chilies, onion, and garlic:

Place the cleaned chilies, onion, and garlic in a medium saucepan. Cover them with water and bring to a simmer over medium heat. Simmer for about 20 minutes until the chilies soften.

3. Let cool:

After 20 minutes, remove the saucepan from heat and let it cool for 10 minutes.

4. Blend the sauce:

Transfer the chilies, onion, and garlic to a blender. Add 2 cups of chicken broth and blend until smooth.

5. Strain:

Pour the blended mixture through a fine mesh strainer into a bowl, using a spoon to help push the liquid through and discard any seeds or solid pieces left behind.

6. Cook the sauce:

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Slowly add the strained sauce, stirring frequently. Cook for about 5-7 minutes until the sauce is heated through and slightly thickened.

7. Season:

Taste the sauce and add salt as needed.
