Sick of Taco Tuesday or is it just me?

Try this Enchilada Bake! (I’ll tell you what I used vs the recipe called for!)

Ingredients

Oil - for cooking meat

Onion powder (recipe: 1 onion)

Garlic powder (recipe: 4 cloves)

1 pound ground beef

** 1 bell pepper if you want, I didn’t

1 can black beans (drained)

** I added a can of corn (drained)

Salt/Pepper

1 TSP Cumin

Enchilada Sauce (15oz+)

Tortillas (Recipe: Corn)

** I only had flour, it worked!

Your fave cheese (I had Colby Jack)

1. Preheat Oven to 375

Grease 8x10 pan

2. Brown meat with onion & garlic powders

** if you’re using fresh ingredients sauté them first then brown meat

3. Add in corn & black beans

Season with salt/pepper/cumin

4. Add 1 cup of Enchilada sauce

Let simmer low/med 5 minutes

5. In glass pan add a small amount of enchilada onto bottom

Then cut edges off tortillas so flat ends fit to walls of glass plan

Then layer :

Tortilla

Meat mixture

Favorite cheese

Tortilla

Meat Mix

Cheese

Until all meat mix is used. Ending with a layer of cheese on top

** I drizzled a little more enchilada sauce over the very top because we love the sauce

6. BAKE: 375 covered 15 minutes

THEN uncover and bake 5 minutes

THEN let it rest 5 minutes

Ready to serve! And garnish with sour cream if you’d like 🫶
