This recipe took a while to make, but soooo worth it!! Super sweet so it’s perfect with a cold glass of milk!! 🥰
Blueberry Filling:
✨ 200g Blueberries
✨ 50g Sugar
✨ 1 tbl Cornstarch
✨ 1 tbl Lemon Juice
💥 Put all ingredients into a pot and cook to a boil, stir until thickened! Set aside!
Dough:
✨ 100g Sugar
✨ 180g Milk
✨ 2 1/2 tsp Yeast
✨ 1 Egg
✨ 1 Egg Yolk
✨ 57g Butter ( melted )
✨ 390g Bread Flour
✨ 1/2 tsp fine Sea Salt
💥 In a small pot, warm mix until ( not too hot, about 100° ) Take off heat!
💥 Sprinkle in yeast and sugar, let sit for 5 minutes
💥 Into a mixing bowl, mix all dry ingredients, then add in the egg, egg yolks, melted butter & yeast milk mixture! Mix until combined!
💥 On medium speed, knead dough for 10 minutes!
💥 Place dough into an oiled boil, cover with plastic wrap and let proof for 1 hour and 30 minutes!
💥 On a floured surface, roll out dough into a rectangle, spread on the blueberry filling, & roll up tightly and pinch the seams closed!
💥 Seam side down, cut off the ends & cut into 8 even rolls!
💥 Place into a parchment lined baking dish, cover with plastic wrap and let proof for 1 hour!
💥 Remove plastic wrap & bake at 350° for 20-25 minutes!
💥 Pour on frosting while rolls are still warm & enjoy!!
Lemon Cream Cheese Frosting
✨ 4 ounces Cream Cheese ( softened )
✨ 4 tbl Butter ( softened )
✨ 2 cups Powdered Sugar
✨ 4 tbl Lemon Juice
💥 Put all ingredients into a stand mixer and mix til smooth, place in fridge until ready to use!
