This recipe took a while to make, but soooo worth it!! Super sweet so itβs perfect with a cold glass of milk!! π₯°
Blueberry Filling:
β¨ 200g Blueberries
β¨ 50g Sugar
β¨ 1 tbl Cornstarch
β¨ 1 tbl Lemon Juice
π₯ Put all ingredients into a pot and cook to a boil, stir until thickened! Set aside!
Dough:
β¨ 100g Sugar
β¨ 180g Milk
β¨ 2 1/2 tsp Yeast
β¨ 1 Egg
β¨ 1 Egg Yolk
β¨ 57g Butter ( melted )
β¨ 390g Bread Flour
β¨ 1/2 tsp fine Sea Salt
π₯ In a small pot, warm mix until ( not too hot, about 100Β° ) Take off heat!
π₯ Sprinkle in yeast and sugar, let sit for 5 minutes
π₯ Into a mixing bowl, mix all dry ingredients, then add in the egg, egg yolks, melted butter & yeast milk mixture! Mix until combined!
π₯ On medium speed, knead dough for 10 minutes!
π₯ Place dough into an oiled boil, cover with plastic wrap and let proof for 1 hour and 30 minutes!
π₯ On a floured surface, roll out dough into a rectangle, spread on the blueberry filling, & roll up tightly and pinch the seams closed!
π₯ Seam side down, cut off the ends & cut into 8 even rolls!
π₯ Place into a parchment lined baking dish, cover with plastic wrap and let proof for 1 hour!
π₯ Remove plastic wrap & bake at 350Β° for 20-25 minutes!
π₯ Pour on frosting while rolls are still warm & enjoy!!
Lemon Cream Cheese Frosting
β¨ 4 ounces Cream Cheese ( softened )
β¨ 4 tbl Butter ( softened )
β¨ 2 cups Powdered Sugar
β¨ 4 tbl Lemon Juice
π₯ Put all ingredients into a stand mixer and mix til smooth, place in fridge until ready to use!
