Pozole Rojo with chicken

In a large pot boil

-1 1/2 lbs of chicken breast

-4 garlic cloves (peeled)

- half a white/yellow onion

-1 table spoon of chicken knorr

Soak in hot water for 5 minutes

- 6 chiles guajillos (de seeded)

- 5 chiles de arbol (keep seeds for spice)

- 3 dry chiles chipotle

Blend

- all the chiles

- 3 garlic cloves

- half a small white/yellow onion

- 2 cups of water where the chicken is boiling (after it’s done)

- 3 tablespoons of chicken knorr

- 2 teaspoons of ground cumin

-Remove the boiled chicken and shred

-Discard the onion and garlic cloves in the chicken broth

- add shredded chicken back into pot

- add a large can of hominy (after it’s rinsed)

- add blended chiles (no straining)

Add more water if needed

Add more chicken knorr if needed

-chopped radishes

-shredded cabbage

- limes

-tostadas
