For our first meal in Japan we had to go with the popular 🍜 𝑰𝒄𝒉𝒊𝒓𝒂𝒏 𝑹𝒂𝒎𝒆𝒏 🍜. The "McDonald’s m" of ramen as dubbed by one of my favourite food youtubers. I'd like to see McDonald’s draw a queue this long. We were fortunate to visit the Ichiran at Ueno station before lunch time as there was line snaking out the door when we left.

What makes Icihiran stand out from the ramen in Singapore is the broth. The broth was complex with a little special something that I cannot pinpoint. What I am sure of is that there is an it-factor in the broth that makes it taste oh so much better than the ramen in Singapore. The creamy, savoury & lightly sweet tonkotsu broth has to be one of the best I've tried.

I got their minced garlic and added it to the soup and I regretted it immediately. While the added garlic flavour was nice, it was so strong that it masked what made the soup amazing and threw off the balance of flavours in the soup. You know the soup is good when minced garlic makes the soup worse.

As for the eggs, it was one of the best ramen eggs I’ve tried. It was slightly salty, slightly sweet and very well marinated. The egg white was soft and silky while the egg yolk was just the perfectly amount of runny. I don't enjoy solid egg yolks so the runniness of Ichiran's egg yolk was just perfect for me.

As for the noodles, I ordered the normal softness and found it too soft and soggy. That's where one of Ichiran's strength comes in. Ichiran allows you to customise almost every element of your ramen include how soft your noodles is. Next time, WHEN I come back for Ichiran I'll be sure to order the harder noodles.

Overall, I’d say that Ichiran Ramen is a place you cannot miss when you visit Japan, even if you aren’t a huge fan of ramen like me. I had was expecting to be served a bowl of underwhelming, overhyped ramen dish but this far exceeded my expectations. Also, you MUST order the soft boiled egg!
