SUNDAY MORNING PANCAKE RECIPE

Twice a month, I make Sunday Morning Pancakes for the weekend days where I’m incredible hungover, or just when I’m craving something sweet.

I’m a pancake SNOB and truthfully, I don’t make my pancakes from scratch (think it takes too long). For my pre-mixed girlies, I think I’ve perfected the pancake recipe with Fabulous Pancake Mix made in Luxembourg (can find in Whole Foods) — see details below:

SUNDAY MORNING PANCAKE RECIPE:

Mix 1 cup fabulous pancake mix (opt for a natural, low sugar, low sodium mix) with 2/3 cup milk (I chose coconut milk, but sub with any nut milk of choice!)

On medium heat, add three generous scoops of your mix to a large pan greased with SALTED butter.

While cooking, add sliced bananas or dark chocolate chips.

FLIP

Top each pancake with natural creamy peanut butter, more bananas, and walnuts

Sub maple syrup for honey!
