Ingredients (Makes 6 pieces):
• High-gluten flour: 300g
• Ice water: 155g
• Matcha powder: 8g
• Salt: 5g
• Sugar: 10g
• Fresh yeast: 8g
Filling:
• 120g cream
• 30g sweetened red beans
• 10g powdered sugar
Instructions:
🌟1. Mix the dry ingredients. Gradually add ice water to prevent the dough from rising too quickly.
🌟2. Once mixed, knead the dough until smooth. Let it rest covered in a warm place until doubled in size.
🌟3. Divide the dough into 6 portions, shape each into a ball, and let rest for 25-30 minutes.
🌟4. Prepare the filling by mixing the cream with powdered sugar, then fold in the red beans.
🌟5. Roll out each dough ball, place the filling in the center, and seal it like a dumpling.
🌟6. Place the filled dough on a baking sheet, cover, and let rise in a warm place for 35 minutes.
🌟7. Boil 500ml of water, dissolve 25g of sugar in it, then lower the heat. Dip the risen dough into the water for 20 seconds each.
🌟8. Bake the dough at 210°C (top heat) and 190°C (bottom heat) for 16 minutes.
