Matcha Muffin
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 2 eggs
- 1 cup plain flour
- 2 tsp Matcha.com matcha powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp vanilla extract
- pinch of salt
Matcha Streusel
- 1/4 cup unsalted butter, chilled
- 1/4 cup plain flour
- 1/8 cup granulated sugar
- 1 tsp Matcha.com matcha powder
— Start by preparing the matcha streusel topping. Cut chilled butter into pea size cubes.
— Rub all ingredients by hand or using a pastry cutter until the mixture appears crumbly.
— Store in an airtight container and refrigerate until ready to use.
— Preheat the oven to 360F.
— Place muffin cups in the muffin molds. Set aside.
— In a medium bowl, combine sifted flour, baking powder, baking soda, and matcha.
— In a small bowl, crack and beat the eggs. Set aside.
— In a large bowl, combine butter, sugar, vanilla, and salt. Beat on medium speed or mix until light.
— Gradually add the eggs, alternately with the flour mixture. Cream and mix well after each addition.
— Transfer the mixture in a piping bag with a plain tip or use an ice cream scooper.
— Fill the mold to about three-fourths full. Top with the streusel topping, about 1 tablespoon each.
— Bake in the oven for 20-30 minutes. Let it cool before removing from the molds.
