Pickled onions are one of my favorite ingredients to have on-hand. They are great on-top of many different foods like sourdough sandwiches, bbq chicken pizza, salads, and avocado toast. They are also fermented, meaning that your digestive system will LOVE them...as it feeds the good bacteria in your gut that helps you push food through your system.

Here's what you'll need:

- 1 red onion

- 3 cups white vinegar

- 1 1/2 tbs coconut palm sugar

- 1/2 tbs peppercorns

- 1/2 tbs salt

- 1 pint jar

- *bonus ingredient = fresh ginger slices (anti-inflammatory spice)

Directions:

1. cut the top & bottom off the onion - cut in-half the long way - make 1/4 inch slices on both halves

2. add all of your cut onion slices into a pint jar

3. in a stove top pan, place all of your ingredients (minus the onions, of course)

4. bring to a boil, then turn off burner

5. pour the hot liquid into the pint jar, seal with lid, and set on counter to cool

6. once cool, store in fridge and use as needed!

This recipe is super simple, and very easily one you could add to your weekly or bi-weekly meal prep!
