BUFFALO CHICKEN ZUCCHINI BOATS
Lemon8 made me do it! I recreated a recipe that another Lemon8 creator posted and it was absolutely deliciousβ10 out of 10! This is the best low-carb, high-protein dinner!! Itβs the easiest dinner recipe ever and makes for great leftovers!
Ingredients:
β’ 3 zucchini
β’ 2 chicken breasts, shredded
β’ 1/2 cup Greek yogurt
β’ 1 cup shredded cheese
β’ 1/3 cup hot sauce (1/2 cup if you want it spicier)
β’ 2 tsp garlic powder
β’ Salt & pepper
β’ Green onions
β’ Ranch
Instructions:
1. Preheat oven to 400 degrees.
2. Cut zucchini lengthwise in half and scoop out the insides (enough to fill with the mixture).
3. Place them on a baking sheet, spray with olive oil, and season with salt & pepper. Bake for 10 minutes.
4. Make the filling by mixing together the chicken, 1/2 of the cheese, Greek yogurt, hot sauce, diced zucchini insides, garlic powder, salt, & pepper.
5. Add the chicken mixture to the zucchini and sprinkle cheese over the top. Bake for 20-25 minutes.
6. Top with green onions and a drizzle of ranch!
