This year was my first time roasting a turkey and I was so stressed. But it came out so good!
My turkey took 3 days to thaw since it was about 12 pounds. Once it was fully thawed I brined in a brine bag and put it in an ice chest with ice to keep it cool. the brine was
1 cup of salt
1 cup of sugar
2 heads of garlic with the tops cut off
2 quartered onions
a handful of dried rosemary
1/4 cup sassafras powder
4 cups of water
I used the Tony's creole seasoning for injecting the bird.
I used a cajun garlic herb butter to put between the skin and meat and to spread over the turkey.
for the garlic herb butter I used
2 sticks of unsalted butter
5 cloves of garlic
1/2 tbs cajun seasoning
1/2 tsp salt
1/2 tsp pepper
1 tbs oregano
1 tbs Thyme
1 tbs bay leaf
the zest and juice of half a lemon
I blended it all together and spread it under the skin and melted it and poured it over the bird.
