Ingredients:
1.5lb Ground Beef
1.5 tbsp Olive Oil
1 Onion (diced)
2 Cloves of Garlic (minced)
4oz can of Diced Green Chiles
28oz can of Enchilada Sauce
1.5 cups Corn (frozen or a can)
18 small tortillas
16oz bag of shredded cheese
1/2 tsp cumin
1/2 tsp oregano
1 tbsp chili powder
Directions:
1. Heat oil in a large skillet. Add onions and cook for about 5 minutes.
2. Add ground beef. Cook until browned. Add spices and cook until meat is done.
3. Add corn and green chiles. Stir then set mix aside.
4. In a 13x9 dish, pour some enchilada sauce to moisten bottom.
5. Begin layering in this order: 6 tortillas, 1/2 of meat mixture, 1/3 of cheese, 1/3 of enchilada sauce. Repeat for a second layer.
6. Finish by topping with 6 tortillas, and the remaining enchilada sauce and cheese.
7. Cover with foil and cook in 350 degree oven for about 40 minutes or until hit and bubbly.
