this is my newest go to cupcake recipe - these chiffon cupcakes are so light and fluffy 馃い the best part is that they are easy to make and require only a few ingredients which you probably already have lying around your kitchen.

here are the ingredients:

4 eggs, separated

40g white sugar

30g corn oil

50g milk

60g cake flour

9 cupcake liners

Steps:

Preheat your oven to 120C. Line pan with cupcake liners.

In a mixing bowl, whisk the

oil and milk till well combined. Sift the cake flour into the mixture and whisk until smooth and a thick paste forms. Proceed to add in the egg yolks and whisk till full combined

In a separate clean bowl, beat the egg whites with an electric mixer until foamy. Gradually add a small amount of white sugar and continue beating until stiff peaks form.

take about 1/3 of the beaten egg whites and gently fold it into the batter, using a spatula. once combined, add in the remaining egg whites and gently fold till fully combines

Divide the batter evenly among the cupcake liners.

Bake at 120C for 40 mins, after that, increase the heat to 140C and continue to bake for 10-15 mins.

Remove from the oven and let the cupcakes cool completely.

Once the cupcakes are cooled, you can either enjoy them as is or top them with your choice of frosting or garnish.
