It’s 3am, and I’m writing my first lemon8 post 😂😂😂😂

As what it states on my title, I was scrolling through TikTok at 1am, and saw a video about this Japanese girl who opens a bakery at her garage and sold everything within 2 hours, and she shares her recipe. So why not try it 😂

Hence I started baking the chiffon cake at 1am, and finish it around 2.30am. It’s not too hard just prepping the ingredients takes some time. I used a 6 inch cake tin but the recipe calls for a 7 inch baking tin, hence the extra “cupcakes”.

The recipe uses rice flour hence it’s gluten free. And my parents prefers rice flour compared to normal flour.

I use the air fryer to baked it, as I find it easier to control the temperature

Anyway, the cakes will be cooled by tomorrow morning so let’s see if the cakes are a success or failure. (Meh🤷🏻‍♀️)

7inch matcha cake

Part A

- egg yolk x 4

- milk 60g

- corn oil 50g (any type of oil is fine)

- Rice flour 75g

- Matcha powder 5g

- Sugar (Yolk mixture) 15g [can reduce by 20%]

Part B

- egg white x 4

- Lemon Juice 5g

- Sugar ( White mixture) 45g

[Do not change the amount for this]

1. Separate the yolk from the white, and keep the whites in the fridge before you use it

2. Mix the milk and oil till it emulsifies together then mix the yolk, sugar, flour and matcha powder together.

3. In another bowl, beat the egg white with an electric mixer, and add lemon juice.

4. Gradually add the sugar in three parts to ensure the sugar and whites are mixed well together. Beat till stiff peak

5. Add 1/3 of whites to yolk mixture and mix it well

6. Pour the mixed yolk mixture to the white mixture at the side and gradually fold them in till well cooperated

7. Bake it at 150-155 for 40-45 mins and cool it upside down to prevent the cake sinking

Edit: the cake came out well, now I just need to figure out the 6 inch recipe….

The reason why my cake tin is 6 inch, cause my air fryer could only fit 6 inch 😂
