I often find myself on the go in the morning and not wanting nor having much time to make something, but I also know how important eating breakfast is for my health, especially my hormones. 🫶🏻
So, here is my favorite meal prep for breakfast that will last you the whole week.. and did I mention that they are DELICIOUS! This recipe is also dairy, gluten, and refined sugar free! 🤤
🧡 RECIPE:
- 2 cups gluten-free oats
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
- 2 pasture-raised eggs
- 2 tsp vanilla extract
- 1 1/4 cups oat milk
- 1/3 cup maple syrup
- 1 cup pumpkin puree
- 1 bag dairy-free chocolate chips
🧡 INSTRUCTIONS:
- preheat oven to 375 F
- combine dry ingredients and mix
- combine wet ingredients with the dry and mix
- add in chocolate chips
- spray baking pan with avocado oil spray and line with parchment paper
- pour mixture into baking pan
- bake for ~50 minutes at 375 F
- cool for 5-10 minutes before cutting
- store in the fridge
