I often find myself on the go in the morning and not wanting nor having much time to make something, but I also know how important eating breakfast is for my health, especially my hormones. ๐ซถ๐ป
So, here is my favorite meal prep for breakfast that will last you the whole week.. and did I mention that they are DELICIOUS! This recipe is also dairy, gluten, and refined sugar free! ๐คค
๐งก RECIPE:
- 2 cups gluten-free oats
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
- 2 pasture-raised eggs
- 2 tsp vanilla extract
- 1 1/4 cups oat milk
- 1/3 cup maple syrup
- 1 cup pumpkin puree
- 1 bag dairy-free chocolate chips
๐งก INSTRUCTIONS:
- preheat oven to 375 F
- combine dry ingredients and mix
- combine wet ingredients with the dry and mix
- add in chocolate chips
- spray baking pan with avocado oil spray and line with parchment paper
- pour mixture into baking pan
- bake for ~50 minutes at 375 F
- cool for 5-10 minutes before cutting
- store in the fridge
