super yummy and a quick, high-protein meal to make 🥕
ingredients:
- quinoa (i cooked 2 cups but used ~1/2 cup)
- water (to cook quinoa)
- carrots
- scallions
- 2 pasture-raised eggs
- olive oil (as needed)
- optional: red pepper flakes or sriracha dressing
instructions:
- add quinoa with water to a pot
- boil then let simmer for 10 minutes while continuously stirring
- add olive oil
- add cut carrots and scallions
- mix and tenderize vegetables
- add 2 eggs
- mix and cook eggs
- plate and add optional toppings
