I made this Quinoa fried rice for lunch, and it was so delicious
1 cup Quinoa (washed)
1 cup water
1 cup mixed vegetables
1/2 red bell pepper (diced)
1/2 yellow onion (diced)
1 tsp granulated sugar
1 tsp fresh ginger/ginger paste
1 tbsp diced garlic
3 eggs
Soya sauce
black pepper
1 tsp garlic powder
Cook Quinoa for 15 minutes and let it rest for 5 minutes. In a wok or large frying pan, add your vegetable oil and sauté the onion, bell pepper, and garlic add mix vegetables and ginger sauté for 5 minutes. Add Quinoa and mix into vegetables, then eggs and scramble into Quinoa season with soya sauce, black pepper, garlic powder, and sugar.
