Happy CNY!!! It's been such a rainy and gloomy cny, so here's a warm and comforting recipe that'll make the rainy blues go away ☺️ i LOVE shrimp scampi, especially with a good basket of bread!! My recipe is pretty simple and it can be made in under 15 minutes ok, great for group meals too!
Makes ~2-3 servings:
• 15-20 deshelled shrimp (i used frozen)
• 2 tbsp garlic (minced)
• 1 tbsp shallots (minced)
• 2 tbsp unsalted butter
• 1/2 tbsp olive oil
• 1/4 cup white wine/stock
• 2 tbsp heavy cream
🧄 Firstly, fry off your garlic and shallots in oil and butter, until they're super fragrant and slightly translucent.
🌶️ Add in chilli flakes to your heart's content and stir fir another few seconds before adding prawns. Stir till prawns are red on both sides.
🍾 Pop that wine open and pour it in, letting the alcohol cook off for 2 minutes before adding in the cream. Turn off the heat.
🌱 Garnish with parsley, toast your bread and SERVE.
