Gambas al ajilloย is one of the most popularย tapasย in Spain ๐ This Spanish take on garlic shrimp or prawns is full of rich robust flavours (where my garlic lovers at!! ๐๐ป) and you can easily whip it up in 10 mins or so! ๐ Who doesnโt love a quick and easy recipe thatโs fancy enough to impress your guests or your date? ๐๐คญ

100-120g extra virgin olive oil
10-12 cloves of garlic, sliced or minced
1 tsp chili flakes
10-15 prawns, deveined and deshelled (๐ฅTIP โ pat dry before cooking!)
1 tbsp lemon juice
Handful of chopped parsley
Salt & pepper to taste
๐ฅ Bread options โ sliced baguette, focaccia, or sourdough!

1๏ธโฃ In a large pan, warm the olive oil over medium heat. Add garlic, lower the heat, and sautรฉ until the garlic is aromatic and just starts to brown. Be careful not to let the garlic burn!
2๏ธโฃ Increase the heat to medium-high. Add the prawns and toss in oil.
3๏ธโฃ Add chili flakes and lemon juice. Stir until prawns are barely cooked through.
4๏ธโฃ Lastly, turn off the heat and add chopped parsley. Season with salt and pepper to taste.
Voilร ! Your dish is ready to be served โ donโt forget the warm toasty bread to mop up all that saucy goodness! ๐ฅ

๐๐ป As the sauce is incredibly crucial to this recipe, please be careful not to overheat the oil or burn the garlic or chili, which will result in a bitter taste ๐ฅต If you are unsure, keep the heat low at all times!
๐๐ป It is optional but also incredibly flavourful to use prawn oil or Spanish brandy for this dish! ๐ฅ
