Try this easy lasagna soup recipe for your next meal prep ๐คค
Perfect for fall/wintertime. So filling and comforting!
I cooked my soup in a dutch over and it took about ~45 min (including the chopping/mincing of onion and garlic).
My FAVORITE thing to cook right now is anything that can be combined in ONE pot (typically soups) that has everything a balanced meal contains (protein, carbs and fats)
Now this is not a LOW FAT food by any meals, but itโs all about balance and Iโm here for that! ๐๐ผโโ๏ธ

1. Combine in a med bowl the parm, mozzarella, ricotta, and fresh parsley (then put to the side)
2. In a large pot or Dutch oven, heat olive oil over med heat. Add in onion and a pinch of salt and cook for 4 min. Add garlic and cook another 30 sec.
3. Add in ground beef and cook until brown. Breaking it into small pieces.
4. Season ground beef with all dried seasonings.
5. Add in tomato paste and stir. Cook for 1-2 min. Pour in chicken broth & marinara. Bring to a boil.
6. Add in lasagna pieces and cook accordingly to package. Typically about 10-13 min.
7. Once noodles are cooked, pour in heavy cream and fresh torn basil. Stir and enjoy!
