Pancakes:

1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk (or plant-based milk)
2 tablespoons vegetable oil or melted butter
1 teaspoon vanilla extract
Topping:
Icing sugar (for dusting)
Butter (for serving)
Instructions:
Mix Dry Ingredients: In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Combine Wet Ingredients: In another bowl, mix the milk, oil, and vanilla.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined; a few lumps are okay.
Cook Pancakes: Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve: Stack the pancakes, dust with icing sugar, and add a pat of butter on top before serving. Enjoy!
