🥣 Zuppa Toscana - a cozy bowl of deliciousness! 🥣
Ingredients:
- 1 lb Italian sausage (mild or spicy)
- 4 cups chicken broth
- 2 cups water
- 1 large potato, thinly sliced
- 1 cup kale, chopped
- 1/2 cup heavy cream
- 1 teaspoon garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup onion, diced
- Cooking oil (for sautéing)
Directions:
Brown the Sausage:
In a large pot, heat a little oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned.
Sauté the Vegetables:
Add the diced onion and minced garlic to the pot with the sausage. Sauté until the onion becomes translucent.
Add Broth and Potatoes:
Pour in the chicken broth and water, then add the sliced potatoes. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15 minutes.
Add Kale and Cream:
Stir in the chopped kale, heavy cream, red pepper flakes (if using), salt, and black pepper. Cook for an additional 5-7 minutes until the kale is wilted and tender.
Serve:
Ladle the Zuppa Toscana into bowls and enjoy the warmth and flavor!
