Here is what you’ll need:
✨Eggs – These act as a binder, holding all the ingredients together. We haven’t tested this recipe with egg substitutes like flax eggs or chia eggs but would love to know how it goes if you do.
✨Milk – Feel free to use any kind of milk you like best. Dairy milk, almond milk, coconut milk, it all works!
✨Butter – This adds a rich flavor. If preferred, light olive oil will also work.
✨Vanilla – Don’t skip this! It adds a delicious vanilla flavor and enhances the rest of the ingredients.
✨Oats – Use old-fashioned rolled oats, not steel-cut oats or quick oats. Or, the taste and texture won’t be the same! If needed, use certified gluten-free oats.
✨Sweetener – We monk fruit sweetener, but coconut sugar or granulated sugar will also work.
✨Baking Powder – This helps the oats rise, creating a soft texture.
✨Cinnamon – Adds extra depth and subtle warmth.
✨Salt – Just a pinch enhances the rest of the ingredients. It doesn’t make the oats salty, but you’ll notice if you’re not there!
✨Mixed Berries – Use your favorite frozen berries. We prefer mixed berries, but any combination of blueberries, blackberries, raspberries, and strawberries will work.
Here is how to make it:
✨Prepare. Before you begin, preheat your oven to 350 degrees Fahrenheit. Then, grease a 9×13 baking dish, and set it aside.
✨Combine the wet ingredients. In a large bowl, whisk the eggs, milk, melted butter, and vanilla until smooth.
✨Add the dry ingredients. Stir in the oats, sweetener, baking powder, cinnamon, and salt until well combined.
✨Bake. Transfer the dish to the oven, and bake until the center is set and the edges are lightly browned.
