My go-to pizza crust recipe. So easy, so so good, I make this once a week and change up the toppings. I usually sneak in some hidden vegetables without my kids even noticing a difference.
Ingredients:
- 1/2 cup sourdough discard
- 2 teaspoons salt
- 2 tablespoons olive oil
- 1/3 cup + 1 tablespoon whole wheat flour
- 3 3/4 cups all-purpose flour
- 1 1/3 cups + 2 tablespoons water
Directions:
- in a large bowl, mix all ingredients the night before. cover and leave on counter to ferment overnight.
- the next morning, do one set of stretch and folds with wet hands. cover and place in the refrigerator.
- remove dough from refrigerator and allow to warm to room temperature for 30 minutes.
- divide dough in 2.
- on a floured surface, begin to work dough into desired shape and thickness.
- transfer dough to cast iron pan.
- add sauce, cheese, and toppings.
- cook on medium heat stovetop until bottom of pizza begins to crust (2-3 minutes).
- transfer to preheated, 500° oven and continue cooking until golden (5-6 minutes).
