🔶You’ll need (for a 6” cake):
🔸For the crepes:
3 eggs
35g sugar
150g cake flour
350ml milk
50g unsalted butter, melted
🔸For the lemon curd:
1 egg
40g sugar
1g salt
Juice of 1/2 lemon
20g unsalted butter
🔸For the lemon cream:
200ml whipping cream
15g sugar
35g lemon curd
🔶You’ll do:
1. In a mixing bowl, add all ingredients for the crepes, mix well, and sift the batter once for a smoother texture. Set it in the refrigerator for at least 30 minutes.
2. In a saucepan, add all ingredients EXPECT the unsalted butter for the lemon curd, and heat them over medium-low heat while stirring. Once small bubbles are forming in the pan, remove it from the heat, add the unsalted butter, and mix well. Put the lemon curd in the refrigerator to cool.
3. Heat an 8” frying pan (or a crepe pan if you have one) over medium-low heat, add enough vegetable oil to cover the bottom of the pan, and pour a scoop (I used a 1/4 measuring cup) of the crepe batter in the pan. Cook each side for about 1 minute and then transfer it to a cooling rack. Repeat this step with the rest of the crepe batter. Stack all the crepes together and use a 6” ring cutter to cut out all the crepes. Set them aside.
4. In a mixing bowl, add all ingredients for the lemon cream, and whip them until small stiff peaks are formed.
5. On a plate, lay a sheet of crepe down, spread a thin layer of lemon cream evenly on top, and place another sheet of crepe on top of the cream. Repeat this step with the rest of the crepes and lemon cream. Gently place a plate on top of the cake, and put it in the refrigerator for at least 30 minutes.
6. Smooth the cream on the side of the cake if needed, and then add lemon slices for decoration. (Optional) If you have any leftover lemon curd, heat it up and mix it with gelatine powder or sheet, and pour a thin layer of it on the very top of the cake. Put the cake in the refrigerator for at least an hour or until the gelatine layer is set before serving.
