Oreo Cupcakes with Oreo Whipped Cream Icing
Makes 12 Cupcakes
Ingredients
Cupcakes:
• 1/2 cup unsalted butter, room temperature
• 3/4 cup sugar
• 2 egg whites
• 3/4 cup sour cream
• 1/4 cup milk
• 1 tsp vanilla extract
• 1 1/4 cup all-purpose flour
• 1 tsp baking powder
• 1/4 tsp salt
• Crushed Oreos
Icing:
• 114 grams heavy cream
• 30 grams powdered sugar (add more if you would like it sweeter)
• Splash of vanilla
• Crushed Oreos
Instructions
1. Preheat Oven: Set the oven to 350°F and line a cupcake pan with liners.
2. Make Batter:
• Beat butter and sugar until fluffy (1-2 minutes).
• Add egg whites, sour cream, milk, and vanilla. Mix until combined.
• Gradually add flour, baking powder, and salt to the wet ingredients using a spatula.
• Fold in crushed Oreos until just incorporated.
3. Bake: Fill liners with batter and bake at 350°F for 18-22 minutes, or until a toothpick comes out clean.
4. Make Icing:
• Whip heavy cream until it thickens.
• Add powdered sugar and vanilla, then whip to stiff peaks.
• Fold in crushed Oreos.
