For as long as I can remember, I have struggled to maintain a healthy weight. In 2020 I lost 60lbs with intermittent fasting. However, as a newly postpartum (and exclusively breastfeeding) mom, I am unable to fast like I used to. The idea of trying to lose the baby weight without IF was causing me sooo much stress. 😫
That being said, I think I finally found a way to eat abundantly, nourish my healing body and my baby, and still reach my weight loss goals! 🥳
The Whole Foods plant-based diet (WFPB) is a way of eating that eliminates oil, refined sugar, ultra-processed foods, and animal products. A lot of people pursue a plant-based lifestyle for ethical reasons. As for me, I just find animal foods really palatable and somewhat addicting. When I follow this way of eating, I am way more intentional about eating veggies, which has always been hard for me. Also, by eliminating hyper-palatable foods, I am able to control the urge to binge eat.
I am now losing 2 pounds a week and feeling amazing! 🫶🏻
Here are my favorite simple meals that are keeping me on track:
1. Veggie “sushi” wraps 🍣🥑
2. Banana oats with date “caramel,” cacao nibs, and Hu salty dark chocolate 🍫🥣
3. Chocolate, banana, and peanut butter shake 🥜
4. Oil free pesto on brown rice noodles with sprouted garlic sunflower seeds, cherry tomatoes, and nutritional yeast 🍝
5. Creamy potato soup with a homemade sourdough baguette 🥖🍲
6. Cashew-based “Alfredo” on chickpea noodles with broccoli and red pepper flakes 🥦🧀
I also eat a HUGE green salad with a couple steamed potatoes every day! 🥗
All of these meals contain tons of fiber and micronutrients, as well as the necessary amino acids, protein, and fat. I’m so grateful for this way of eating and I get the feeling I’ll be doing this for a long time. 🙌🏻💕
