Chai Tea Concentrate

All you need are some aromatic spices, fresh ginger, and black tea to create this comforting chai concentrate.
Ingredients:
- 12 cardamom pods
- 9 whole black peppercorns
- 9 whole cloves
- 2 star anise
- 30g fresh ginger root, peeled and chopped
- 4 cups water
- 4 cinnamon sticks
- 4 tbsp brown sugar
- 1 vanilla bean, split and scraped
- 1/2 tsp nutmeg
- 9g (about 2 tbsp) black assam tea or 4 black tea bags
Directions:
1. Lightly crush the cardamom pods, black peppercorns, cloves, and star anise.
2. Toast the crushed spices in a pan over medium heat until fragrant.
3. Add the remaining ingredients (except the tea) to the pan, bring to a boil, then reduce heat and simmer for 10 minutes.
4. Add the black tea and continue simmering for another 5 minutes.
5. Strain the chai through a fine mesh strainer into a sealed container.
6. Store in the fridge and enjoy!
