Made these the other night and I am OBSESSED!🤤 Original recipe was from fitfoodieliving on IG and I tweaked it a tad bit based on what I had. Macro breakdown at the end for all my fellow trackers✍🏼

Muffins:

• 3/4 cup pumpkin purée

• 1/4 cup monk fruit (or any sweetener)

• 1/3 cup egg whites

• 1 tsp vanilla

• 1 tsp cinnamon

• 1 tsp pumpkin spice

• 1/4 cup oat flour

• 1 scoop protein (birthday cake or vanilla)

• 1 tsp baking soda

Frosting:

• 1/2 cup 0% greek yogurt

• 2 tbsp whipped cream cheese

• 1/2 scoop protein (birthday cake or vanilla)

• 1/4 cup monk fruit

Cooking:

• Mix muffin ingredients and scoop evenly in cupcake liners or directly in pan (spray with cooking spray either way)

• Mix frosting ingredients and pipe evenly into muffin centers (I just cut a ziplock baggie corner and squeezed it out)

• Bake at 350F for about 22-23 mins

• Let cool and enjoy!
