Xiao Di Hokkien Mee is a Serangoon stall which has gained something of a cult following because itβs run by a young hawker. Theyβre only open for four hours each day and are famous for their lighter, wet-style hokkien mee.

Over in Tiong Bahru Food Centre, thereβs Hong Heng Fried Sotong Prawn Mee, which has held its position as a Michelin Bib Gourmand stall since 2016. Its third-generation hawker fries his wet-style hokkien mee in small batches. The chilli here is extra shiok.

Singapore Fried Hokkien Mee is a popular Whampoa Food Centre stall that operates until 1:30am six days a week. The slightly wet-style hokkien mee is cooked in an umami prawn stock for maximum flavour. Be sure to ask for pork lard as an add-on.

Hokkien Man Hokkien Mee has our vote for being the best hokkien mee in Singapore. Run by a former Les Amis sous chef, the stall is only open for 4.5 hours daily, and sells out quickly. The prawn stock used to cook the noodles here is made with French techniques, similar to the way lobster bisque is made.
